acqua<\/b> per poterlo pulire pi\u00f9 facilmente, pelarlo, tagliarlo in due ed eliminare l\u2019anima.<\/p>\n<p>In una casseruola portarlo per 4 volte a ebollizione in acqua e 40 ml di latte, che devono essere ogni volta rinnovati, quindi cuocerlo una quinta volta nel solo latte e portarlo a ebollizione.<\/p>\n<p>Accertarsi che l\u2019aglio sia cotto (deve sfaldarsi prendendolo tra le dita): se non lo \u00e8, finire di cuocerlo nel latte dell\u2019ultimo passaggio.<\/p>\n<p>Scolare e frullare aggiustando di sale. Passare allo chinois.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 2\">\n<div class=\"cooked-dir-content\">\n<div style=\"background:#efefef;padding:20px\">Far bollire 250 ml di latte. A parte, sbattere i tuorli, versare nel contenitore due cucchiai di latte bollito, mescolare e mettere il tutto nella pentola del latte. Girare continuamente a fuoco lento fino a raggiungere la temperatura di 83\u00b0. Passare al colino e far raffreddare. Unire l\u2019aglio frullato e in ultimo la panna semi montata poco per volta aiutandosi con una spatola. Sistemare di gusto aggiungendo olio, sale e pepe e riporre in frigorifero. Al momento di utilizzarla mettere la crema in un pentolino e scaldarla facendo attenzione a non portarla a ebollizione.<\/div>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-heading\">Per gli spaghetti<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 3\">\n<div class=\"cooked-dir-content\">\n<p><b>Cuocere gli spaghetti<\/b> in acqua bollente salata. A parte in una casseruola soffriggere in olio l\u2019aglio pelato tagliato a met\u00e0 e privato dall\u2019anima e il peperoncino diviso in due per il lungo.<\/p>\n<p>Spegnere la fiamma, aggiungere due mestoli di acqua di cottura della pasta e ridurre leggermente. Eliminare gli aromi e a met\u00e0 cottura della pasta scolarla conservando l\u2019acqua.<\/p>\n<p>Terminare la cottura nella casseruola aggiungendo poco per volta l\u2019acqua.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 4\">\n<div class=\"cooked-dir-content\">\n<p>Quando la pasta \u00e8 al dente toglierla dal fuoco e mantecarla con sale, pepe, olio a crudo e un pizzico di parmigiano.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-heading\">Per il pane condito<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 5\">\n<div class=\"cooked-dir-content\">\n<p><b>Eliminare la crosta<\/b> dal pancarr\u00e8 e frullarlo o passarlo in un setaccio fine. In un saut\u00e9 tostarlo a fuoco medio con olio, aglio, prezzemolo e sale.
